Heirloom Tomato Basil Microgreen Salad with Pan-fried Calamari

What You Will Need:

Breading: All purpose seasoning Salt Equal amounts flour, panko bread crumbs, and parmesan cheese

Salad: ½ lemon, juiced

1 tsp of olive olive

Heirloom tomatoes

Basil microgreens

Zest of 1 lemon

Black pepper to taste

Sea salt to taste

Prepped calamari, ring-sliced in Grapeseed Oil
 
How to cook:

Calamari portion:

Fill frying pan with an inch grapeseed oil, put on stove on medium heat. Thoroughly mix all breading ingredients. Coat calamari rings with breading. When the oil is hot enough, add calamari, a little at a time. Fry until golden and place calamari on paper towels to absorb excess oil. Salt to taste

Salad

Combine microgreens, chopped tomatoes, lemon zest, olive oil, and lemon juice in salad bowlAdd salt and pepper to taste. Set aside. When all elements are ready, place salad on serving plate and put calamari on top. If desired, serve with lemon wedges. Enjoy!
 
Calamari Scampi Salad

What You Will Need:

1 small garlic bulb, peel and mince cloves

2 tsp grapeseed oil

Juice of 5 large lemons

2 sticks of butter

1 cup of dry white wine

1 pint of squid, cleaned and cut into rings

2 cups of mixed field greens

1 bunch of scallions, sliced

2 tsp of drained capers4 cored orange, yellow, or red sweet peppers, sliced

1 bunch of parsley, chopped

What You Need to Do:

Pour grapeseed oil into saucepan, place on burner on medium heat

Saute sweet pepper, scallion and garlic in oil until crisp

Remove from heat. Use the same saucepan, on medium heat, and soften butter. Slowly stir in capers, parsley, white wine, and lemon juice, allow to simmer for five minutes. Add calamari and cook until opaque, stir frequently for 3-4 minutes and remove from heat

Place field greens on plate. Top greens with sweet pepper and calamari mix. Ladle extra butter sauce over salad. Enjoy!
